This 5-minute chicken taco bowl recipe is easy to make and full of flavor. It literally comes together in 5 minutes, which is perfect for weeknight dinners!
Did anyone else ever watch the Semi-Homemade show on The Food Network? I used to make fun of it, but here I am with a semi-homemade recipe. Life has been pretty busy these days (as evidenced by my lack of blogging). I’m making an effort to at least keep food in the house, and semi-homemade recipes are my go-to’s.
There aren’t many ingredients in this 5-minute chicken taco bowl recipe, and the only thing you have to cook is a sweet potato. If you wanted to avoid cooking altogether, use another carb-y thing. Like black beans (which I would have added, had I remembered to buy those). The sweet potato is good though; the cumin and flaky salt are perfection against its natural sweetness.
The real star of this is the rotisserie chicken. I legit could eat a whole one with my fingers, standing there in the kitchen. It’s just so tender and juicy! (Shout out to Whole Foods for sending a “Welcome to the neighborhood” coupon for a free one.)
My favorite thing about this recipe is that it is easily changed depending on what you’re craving that day! You can add any topping you’re salivating over. Think about adding things like pico de gallo, cheese, sour cream tomatoes, the aforementioned black beans… whatever!
Keep a few things to keep in mind to help make sure you’re eating a balanced meal:
- Pick a high-fiber carb like sweet potato, brown rice, quinoa, or beans.
- Add 20 grams of protein for stay-power. Chicken, shrimp, and tofu are all excellent options.
- Include healthy fats. Avocado, olive oil, and nuts, for example.
- Pack in more nutrients by adding a variety of vegetables. Eat the rainbow!
Throw it in a bowl, and you have dinner in 5 minutes, as promised.

Rotisserie makes things so easy! Though I just tried poaching chicken in the instant pot and that was totally easy too haha! Life gets busy so now I try not to stress if I miss a blog post here and there. I’ve just pushed them out for later ha!

I do love me a good juicy rotisserie chicken and anything that comes together in 5 min! My favorite taco topping would have to be avocado, or salsa, or sour cream…I like them all!

I can go on board with everything but the sour cream. I’ve never been a fan. Maybe because it belongs on potatoes? LOL!!!
