Watermelon Basil Gazpacho [Recipe]

It’s pretty hot and humid right now in San Diego.

Feels like my Atlanta hometown!

We’ve had hot soup since Vegas has had a cold, but in the middle of the day there’s no way I could stomach it.  I thought of making tomato gazpacho, but I had half a watermelon in the fridge that needed to be used.  My gazpacho took a strange (but REALLY good) twist and went tropical.

Roasted Garlic Matzo Ball Chicken Soup [Recipe]

Soup in August?

When you’re sick, that’s a must. 

The recipe I’m going to share today is for a hot soup often referred to as Jewish Penicillin… with my own special twist.  It’s a roasted Garlic Matzo Ball Chicken Soup.

Matzo Soup is often referred to as Jewish Penicillin. This Roasted Garlic Matzo Ball Chicken Soup is based on the one my mom used to make for me.  It's the perfect cure whether you have a cold or are simply craving comfort food!

Vegas caught a summer cold.  How you can get a cold in the summer, I have no idea… but it happens to me about once a year.  And apparently to Vegas.  I decided to cure her with a big bowl of Matzo Ball Chicken Soup.

When In Rome

It’s not secret Italy is my favorite place in the world.

I could move to wine heaven.

When it comes to the combination of history and cuisine, there are few places in the world that provide the type of high quality dishes and sightseeing that Rome does.  From Michelangelo’s ceiling in the Sistine Chapel and the Gladiator lore of the Colosseum, to the local eateries and the world-renowned restaurants, weekend breaks to Rome provide something for everyone.  I first went when I was 15 and I think my jaw hit the floor and stayed there the whole trip!

S’mores Protein Pancakes [Gluten-Free Recipe]

S’mores don’t have to wait for dessert.

What ISN’T good in pancake form?

I still had graham crackers and marshmallows leftover from my S’mores Brownies… I had to use them some how!  Why not create a pancake breakfast?  Don’t S’mores Protein Pancakes sound divine?!

Maybe it’s a little strange to have a campfire dessert first thing in the morning,  but it sure is good!

Jerky Heaven [Giveaway] + WIAW

I’m a snack junkie.

If I’m honest I’d rather snack and have a meal.
