Colorado is stunning.
Whether it be a WBFF fitness show or a sunset…
I’ve been enjoying some incredible views in Colorado!

This WIAW I’m in Colorado camping out at Heather’s house. It’s been so much fun being here and in her kitchen!
Read on for my eats, and then check out Jenn’s blog for everyone else’s delicious creations!

Breakfast:
My morning cocktail, even in Colorado. This one was enjoyed with a much better view than is typical!
I gave Heather my fruit (do not get in the way of a reverse dieting bikini girl!), so I went with carrots as my breakfast fruit. They’re one of the sweetest veggies you can have, and make for a perfect way to start the day!
I used shredded carrots to make my TVP oats. I also added some coconut flour and a little additional liquid. Topped with peanut flour.
Mid-Morning Snack:
It was a little disjointed. I had some (unpictured) turkey and hummus, and then I raided Heather’s nuts. #twss
She used these to make sushi (?!). You should go vote for her recipe.
Lunch:
Baked Turbot with greens.
Mid-Afternoon Snack:
Post-workout chocolate shake – eaten right out of the canister. Too hungry to put it in a bowl or take a pic, so here’s a pic I took on Saturday when I did the same thing.
Dinner:
We pre-gamed with fancy beers.
Then it was on to the main event – Heather’s sushi rolls!!! (And more beers!)
Heather actually trusted ME to roll them. She’s is a great teacher, but it’s actually not as hard as I thought it would be. I even made an inside out one. The sushi mat really does help. I’ll be buying one of those when I get home!

Don’t forget to check in with the #MoveHappy week 4 challenge! I’m loving being able to use Heather’s swanky gym this week!
Do you add veggies to your breakfast?
Have you ever made your own sushi rolls? I have!
Ellen says
Carrot cake oatmeal is one of my favourite breakfasts! I just add grated carrots, sultanas and a ton of cinnamon to my regular oatmeal, soo good! I’m glad to see I’m not the only one 🙂
Laura says
Totally! I’ve been doing that one for years. And zucchini!
Khushboo says
Wow nice rolls, girl..I’m especially impressed by the avocado outer layer! I’ve been adding spinach to my smoothie a lot lately and I’m not going to lie- I feel pretty smug that I’ve already gotten in a serving of greens so early in the day 😉
Choc Chip Uru says
Ooh yes, I am all for that chocolate shake! And I never realised but your eye colour is super awesome! Probably form all your healthy eating 😀
Cheers
Choc Chip Uru
Laura says
Awwww… thank you! <3
Angela @ Happy Fit Mama says
Colorado is absolutely gorgeous! Glad you are having fun with Heather!
Lucie@FitSwissChick says
My Sushi Rolls are horrible!! I am definitely NOT talented. Oh well. I can do other things. 🙂
I love my veggies scramble in the morning. Broccoli!
Laura says
No comment about your other skills… 😉
Arman @ thebigmansworld says
Adding veggies to breakfast is an art…shredded zucchini, shredded cabbage, veggies on a pizza….yep.
You guys look like your having a blast…..making homemade sushi? Genius. Stuff it with the good stuff!
Kim @ FITsique says
Yum! Homemade sushi looks amazing but also incredibly intimidating! Every morning I make a veggie egg white omelet to start my day with veggies. It must be the reverse dieting way, get them in early so you can have dessert 😉
Laura says
I thought so too, but it’s shockingly easy!
Linz @ Itz Linz says
i’ve never made my own sushi but my brother has – itz his specialty and he always makes a feast when he does!
Laura @ Mommy Run Fast says
Colorado is gorgeous! I’ve only been there once but would love to go back. As for veggies, I like to saute eggs and kale together for breakfast- or add avocado and tomatoes to eggs, but I definitely don’t get veggies in every morning.
Laura says
That new baby is gorgeous. 😉
Tara @ Sweat like a Pig says
I love making my own sushi but haven’t done it for 5 years maybe? Need to rectify that!
Sam @ Better With Sprinkles says
I”m impressed that you guys made your own! We’ve had a DIY sushi kit for about a year, but we’ve never broken it out…one day!
Laura says
Dooooo it!
Heather @ FITaspire says
You did such a good job with the sushi – looked good & tasted good – exactly as it should! 🙂
Laura says
Thanks for showing me! I’m on a sushi bender now – this will be the first day I don’t have it!
Linda @ Fit Fed and Happy says
I hear Colorado is the coldest state in the states. Is that true?
Laura says
Not even close! It hit 90 while I was there. I’d guess Michigan?
Heather (Where's the Beach) says
Fun times! We made sushi rolls once. I really want to do that again, but holy cow we made SO many, like enough for a party LOL
Alysia @ Slim Sanity says
Always put veggies in my eggs!! I’ve never made my own sushi, I’m a little afraid to try. But I love going out for it!
Deborah says
I put veggies in my omelets all the time. I am in Colorado (Aspen) right now it’s gorgeous! hope you are Heather are having a great time!
Laura says
I love Aspen… wish I was still there in CO.
RavieNomNoms says
Colorado is sick! I love it there 🙂
Laura says
I vote we all move.
Brittany @ Delights and Delectables says
Okay… next time I’m hiding in your suitcase to go with you. Miss you and Heather to pieces!
Laura says
DEAL!
Dietitian Jess says
Yay for Colorado beer!! And I love your artsy CO pics! I’ve made sushi rolls also supervised by a friend but a restaurant here offers a class where you learn and eat, so I might try to do that in August.
Laura says
There’s one here that does that too – I want to go!
Liz @ I Heart Vegetables says
My husband and I made sushi for new years and the mat definitely helped!! 🙂 Your colorado pictures are so cute!
GiGi Eats says
Hmmmmmmm……. Why do I think about some weird kinky food porn when I look at the photo of you and that long long sushi roll?
AHHHHHHH!!!! AH HA AH AH AH HA HA AHA HA AH AH HA!
PS: WTF – why are you in my old stomping grounds (Colorado) when I am NOT THERE. And when the hell are you in LA. Come on now… Although, really I shouldn’t talk considering I don’t go to ATL! LOL.. But I mean, it seems like you travel far more than me! If only teleporting pads existed!
Laura says
That may or may not have been the intent…
PS: We should meet in the middle one day!
lindsay says
screw texas, let’s all move to CO! really! Stay there and we’ll make balls and stuff. and you can compete of course
Laura says
Colorado balls! Wait… aren’t those Rocky Mountain Oysters?!
Cassie @ Rural Running Redhead says
I’m impressed that you guys are brave enough to make sushi. I’m too afraid of poisoning myself. Glad you’re having fun in my beautiful state!
Lee says
We’ve make sushi a few times with friends. It was actually easier than I thought it would be.
Kelly @ Cupcake Kelly's says
Sushi, my sister and SIL have both made it, I think I need to try!
Stacy @ Stacy Eats says
looks like y’all are having a great time! you gonna be moving out there soon?! 😉 i saw heather and kirk might be trying to talk you into it
Laura says
Oh man… I wish!!! I’m trying to talk boss-man into it!
Whitney @ To Live & Diet in L.A. says
Nice rolls! I was shocked too the first time I made them about how easy it was. Way less difficult than you would think 🙂
Lisa says
I use pumpkin in my Breakfasts pretty often (even though it’s Summer), so I suppose I get in some veggies only occasionally since I despise savory breakfasts. I should change that probably…oh well!
Okay, I need to learn how to make sushi rolls. I heart them and whenever I try I get so worked up that I just give up. As a perfectionist, I can never get them right and it makes me too annoyed ha.
Laura says
Haha – are you permanently orange yet? 😉
Hope you’re doing well!!! Miss you!
Meghan@CleanEatsFastFeets says
It sounds and looks like you and Heather are having a blast in Colorado. I’m thrilled for you two. Enjoy it, live it up, not that I would think you’d do anything less.
Laura says
Go big or go home! Wait… I did have to go home. It didn’t work. Wahhhhh!
