This Cornbread Waffle Sandwich uses cornbread as a healthy “bread” for a cheesy egg and bacon breakfast sandwich. The perfect customizable breakfast for a crowd!
Heather and her husband Kirk came to visit this week, and Vegas and I had a blast entertaining them in our new town.  We were friends back in Atlanta, but now that we’ve all moved it’s even more special when we can get together.
Heather and Kirk are no strangers to strange goodness, so I decided to make a worthy breakfast for everyone.*
*Except for Heather. Â She’s 4 weeks out from her 3rd Bikini competition!
Remembering my cornbread waffle recipe, I decided to use them as the “bread” for this breakfast sandwich.  It worked really well!  I made a double batch of the recipe and poured them a bit thinner to make sure you could actually get your mouth around the sandwich.
I know Kirk is a big bacon fan (as is Vegas), so that was a must.  You can’t really have a breakfast sandwich without it!
I made a giant batch of cheesy eggs and sautéed red pepper to stuff the sandwich.  I used Red Dragon cheese, a Welsh cheddar made with brown ale and mustard seeds.  It’s fantastic; I love the little crunch from the mustard seeds!
Rather than use mayo for the waffle-bread, I slathered it with hummus. Â It’s my new favorite condiment.

I’m so glad these two came to visit!  And I can’t wait to crash their place in Colorado again this winter. 🙂
Have you ever had a waffle sandwich?
What is your favorite condiment?
Yum! This recipe looks amazing and had several of my gavotte ingredients. I can’t wait to try it!
Thank you! Let me know what you think if you try it!
I think a waffle would make a wonderful sandwich! Though I would obviously fill it differently. Maybe tempeh bacon and scramble tofu 🙂
That looks freaking amazing. Just sayin 😉
Thank you!!!
Anything in waffle form is good for me!
OHHH MYYY. YES, just yes. If I’m going to have bread..it’s gotta be CRUNCHY.
xo,
Sarah Grace
I thought your cornbread waffle recipe was brilliant. I need to practice my technique to get the amount of batter and cooking time right.
Thanks! I just used the timer on my waffle maker. It worked well, but I know they’re all different!
I was just saying I need to buy a waffle maker! Cornbread is my favorite too! There is actually a restaurant near my house that has waffle sandwiches. I haven’t been there but it’s always packed.
This is in no way weird to me. Then again, I come from the south, and waffles are totally open season for sandwiches. But damn it looks great!
Right?! The South is such a great food place.
I have never had a waffle sandwich before, let alone a cornbread waffle sandwich. But now I really feel like I’m missing out! I bet Heather was sad to not to get to enjoy your tasty creation. That is some serious self control. I’m glad you guys had fun on their visit! Have a great weekend!
that sandwich DOES look good…
I shared MY waffle here today… my new recipe today? I’ll share here NEXT week, ha!
I cannot WAIT to visit you two – the other day you said something about Vegas and I thought “I cannot wait to meet her!” and then laughed, because… it’s like I already KNOW you, ha! but anyway, is it December yet!?!?
Less than 3 months to go!
I’d totally dig a wafflewich 😉 Screw bread!
Decadent! I’m gonna have to make these this weekend.
I’m a mustard fanatic, I put incredible amounts of mustard on sandwiches 😉
Mustard is my jam! Let me know what you think if you try these!
This sounds absolutely beyond incredible!
Hummus is also my favorite condiment. So good! I need a waffle iron. I keep saying I don’t, but now I realize I definitely do.
I said the same thing for years… now I have no idea what took me so long. Doooooo it! 😉
Interesting how is the hummus with the egg? I do hard boiled eggs w hummus so I guess that works!
Really good! And yes, a lot like hardboiled eggs and hummus.
Omg I need all of this in my life. Some of my favs: waffles, bacon & eggs lol!! I really need to come visit you… You treat your guests so well jkjk hahahah ;-(
You are welcome any time! 🙂
I’ll give you a KNUCKLE SANDWICH… How bout that?
And my favorite condiment = KETCHUP YO! But not that HFCS SHIT… I’m talking the SUGAR-FREE Heinz Ketchup. It’s the sheeze to my NEEZE!!! I squirt it on spinach and shove in my face hole! 😛
This is an amazing idea! I love egg sandwiches, and this just takes them to another level.
I love the idea of hummus in a breakfast sandwich!
you made these for me, right? did you know that arman calls me cornbread cotter? because i am corny. He’s a nerd. But i like the sound of these. DUH!
OMG. I’m now calling you Cornbread Cotter too.
I’ve had that cheese. It was fantastic, and I love these Breakfast sandwiches complete with waffles and bacon. Yes, for you (and also me), I’d eat the bacon.
Cornbread waffles, shut the front door, throw a bit of fried chicken between that baby and you’d be Southern famous.
You had my heart at bacon + waffles. Lol. 🙂 Man running out of bread is a crisis in this house. My son is HUGE on bread – and it’s a problem because he’s a picky eater. I really need to crank up my creativity like you do in the kitchen but .. jeez where do I start? I’m not very creative and am a flawed creature of constants: pasta, meat, pasta, breakfast foods. Lol. Those are my highlights with random Dominican dishes. Have a great weekend Laura! Take Care -Iva
Dominican is creative! I don’t think I’ve ever made anything Dominican…
Imma need this sammich. 😉
This post made me think of cornbread skillet eggs benedicts from Sea & Smoke in Del Mar, in case you have never been there. The ingredients in your breakfast sandwich sound so good too!
I haven’t been there yet! thanks for the suggestion. We are always looking for new spots. 🙂
Waffle instead of bread is just genius- well played! Aside from hummus, my favourite condiment of late is definitely Sriracha- can’t get enough of the stuff!
Waffles are one of my favorite breakfast foods, I love adding cornmeal to the batter since it adds a much needed crunch. The idea of hummus combined with cheesy eggs and peppers made my mouth water. Delicious.
Get. out. of. town. This looks out of this world!! Seriously — sweet and salty is my jam, and I can only imagine the taste of the waffle enveloping this sandwich. Yum!!
The word “enveloping” really doesn’t get used enough.
This looks so good! I think I have to whip these up for the hubby! I’m thinking swap out the hummus for avocado (love hummus but think mashed avocado would taste amazing) and hold the bacon. Oh man if I hadn’t already had breakfast, a creation that just came out of the oven to test and another one going in I would make this since the hubby is working from home today.
I’d love to hear what you think if you try it! Awesome idea with the smashed avocado!
