The flower deliveries have returned!
Remember when Vegas was sending them weekly?
When Vegas and I first started dating, she sent me flowers every week that we couldn’t be together. She lived in Vegas and I lived in Atlanta. Which is how we ended up in San Diego. Long story, which starts here.
Anyway, Vegas and I are a (temporarily) a bi… coastal couple again. 😉 This week, she revived the flower-sending. #spoiledwife
Vegas is coming this weekend though! I signed us up for a 5K, so I’ve been running 5Ks around my ‘hood in preparation. It’s going okay-ish. I want to be a minute faster. Actually, I want to be 6 minutes faster… but baby steps!
More next week on how the race. I will say that it ends with mimosas. A race that ends that way can never be bad, right?!
On to the #WIAW food. It actually involves homemade food this week!
Be sure to link up to Jenn’s WIAW baby at the bottom!
Breakfast:
I made my solo morning cocktail and headed out to work, where I had what has become my standard office breakfast – knock-off Quest bar, a La Croix, and coffee. The cinnamon roll flavor is my favorite
Lunch:
I’d made a bunch of an old recipe – Sriracha Peanut Tofu Power Bowls – for dinner this weekend, so I had some leftover for lunch. I’m obsessed with this tofu. The sauce is peanut flour and sriracha, then you coat the tofu in it and bake. It becomes impossibly fluffy and the flavor is 100% crave-worthy.
Dinner:
I’ve been down with brinners lately. Specifically, this savory french toast topped with #yolkporn. It’s quick, easy, and satisfying.

I just realized… I ate vegetarian all day!
Have you ever baked tofu?
If you run, what’s your favorite distance? 5Ks are my sweet spot. Mostly because I don’t know how to pace.
Patrick@looneyforfood.com says
That is one beautiful looking golf course I spy! Ours are not looking so green around here yet.
I love tofu cooked that way. I coat mine in a peanut flour and liquid amino acid mixture and it taste amazing. I will have to try it with the sriracha peanut flour combo. And I have to try the savory french toast!
Laura says
There are a ton of them in ATL! Vegas is really excited. HA!
Let me know if you try the savory french toast. I think you’d really like it!
Cora says
Eeeee flowers. Vegas gets so many brownie points. All the brownie points. Enjoy your reunion weekend!! Definitely weigh it heavier on the mimosas than the 5Ks…
Laura says
I try not to let it go to her head… but she totally does get all the points. And the brownies.
Kelly @ Kelly Runs For Food says
It took me forever to get into tofu and I’m still working on finding versions I really enjoy. I’ll have to try baking it next time!
Laura says
Baking it is my absolute favorite! Just be sure you press it first (I stack a bunch of cookbooks on top of mine).
Deborah @Confessions of mother says
I love the random flower sending! Wish my hubs was more into that I would love them
Laura says
I’ll get Vegas to give him a nudge. LOL!
Emily Swanson says
I really love half marathons; 5ks are always really high pressure for me. They feel too fast. 😀 Also, I was wondering if you could add my link to the link up Laura? So sorry it’s kind of a nuisance, but I don’t know why (the linkup can’t detect my backlink) – http://emilyanneswanson.com/calorie-counter-forever-nope/.
🙂 Happy Hump Day!
Laura says
I can only do them because they’re fast… the other are wayyyyy too long. I’m not about that kind of commitment. LOL!
Emily, I don’t know what goes on with the link tool and your links. I’m so sorry!
Kate says
I’ve been all about the cinnamon roll Lara bars lately. Low on protein, but the perfect snack for wanting something sweet.
The flower thing? Beyond sweet.
Laura says
I haven’t had a Lara bar in years! I used to love the cookie dough and the carrot cake flavors when I was doing more cardio/endurance stuff though!
Meghan@CleanEatsFastFeets says
5K’s are my sweet spot too….at an 11 minute mile pace. 🙂
Slow but steady right.
Laura says
I hear it wins the race! 😉
Joann @ Woman in Real Life says
That tofu power bowl looks positively yummy! And the flowers are lovely. 🙂
Laura says
Thank you! I love a colorful meal!
Jen @ Chase the Red Grape says
A 5k would be the max I would do. We do a lot of 400 and 800m runs but even then i dont actually enjoy running! But mimosas to finish? I would run strong and long for that!
Laura says
We need a “Will run for mimosas” shirt!
Lynn @ Oh-So Yummy says
Yum! That peanut butter tofu sounds really good! I have a few blocks of tofu in my fridge looking for a destination haha! The flower tradition is so sweet! 🙂
Laura says
A FEW blocks?! You need to get on it! 😉
Mary says
I had a sneaky feeling that flowers were coming your way. OMG Vegas is coming this weekend!! I know you are excited, and what a way to celebrate running a 5K together. I love anything cinnamon roll flavored. Your Sriracha Peanut Tofu Power Bowl looks delicious.
Laura says
We had SO much fun! And I love that she was here in time to enjoy the flowers too.
Have a great weekend!
Nicole @ Foodie Loves Fitness says
That tofu bowl sounds delish! And that’s so cute that Vegas used to send you flowers every week that you weren’t together.. so sweet! I think that just because flowers are the best kind of flowers.
Laura says
She IS super sweet. I got lucky with this one!!
