I joined a “real” gym and ran a 5K.
Slowly I’m re-joining (my version of) the real world.
It’s my last year month in my race age group. Last weekend I ran a 5K that I was hoping I could get a 1st place in (in my age group). I came in 2nd and I’m not at all upset – the girl that beat me finished a full 2 minutes faster. I finished in 25:36:58. This tells me I’m not trying hard enough when I run on my own (2-3 mins slower). It’s just SO hot though!
Also, I still got a rainbow medal and a race t-shirt. Can’t be sad about that.
The “real” gym I joined is an LA Fitness. I’d been using the free office gym, but it just doesn’t have everything I need. Like a squat rack. The bad part about LA Fitness is that it is SO crowded. There aren’t any better alternatives nearby though.

Taking this picture yesterday, I realized how far I’ve come since my ACL surgery. It’s only been 10 months and I’m able to do *basically* anything I could before.
And oh, by the way, the other ACL is still torn. Not doing that surgery again until my knee falls off. That shit HURT.
But you came here for the food. This #WIAW is back on track with meal prep life.

Breakfast:
As always, I made my morning cocktail before walking to work.
I’m back to bringing my breakfast to work this week. Boiled eggs have been my go-t0. I used to think I hated them; then I discovered I only hated them hard-boiled. Medium or soft boiled eggs are delicious! They were enjoyed over some cauliflower I’d roasted in nutritional yeast and mustard. Plus sriracha (always).
Lunch:
Lunch was provided by work. They bring in lunch 3 days a week. Today was my favorite vendor – Gusto! DIY taco bowls are the best. The sweet potato chips don’t suck either.
Dinner:
Dinner was another meal prep dish. I made one of my favorite recipes on this blog: Balsamic Marinated Chicken. It’s stupid easy to make and packed with flavor. It was really nice to have over a salad after dragging myself home post-leg day.

I like my hard boiled eggs soft and nice and runny! Having them with roasted cauliflower sounds really delicious. Congrats again on the race and the knee progress! I don’t blame you on waiting on the other knee, I would do the same.

Cheers to going strong after an injury or surgery. I had a nasty arm injury 8 years ago, and didn’t think I’d ever do yoga again, but even now, I get really excited when I do a plank or handstand.

Go heavy! Women naturally have strong legs – we can do so much more than we think! Getting a good spotter helps too.

Thank you for reminding me that soft or medium boiled eggs are a thing. Now I need to learn how to do that…

I mean… it was 2nd on my age group… but I’ll take it! HA!
Soft/medium eggs are easy! Just leave them in the water for less time. Soft is ~5 mins for me.

Running is actually pretty easy. It’s the side to side or quick stops that I get scared about.

I get super grumpy when I’m at a crowded gym so I really feel for you. Honestly if my crossfit class is more than half full I’m not a happy camper…. I need my space and some sense of calm! I like people around me but not too many… Haha I’m such a grump!

Look at you with those ripped quads not even a year after ACL surgery – you go girl! Yay for a real, but super crowded gym I suppose?! Haha. That’s the worst when it’s really crowded and everyone is using the equipment you want!
