I finally cooked something!
Thank god for friends with easy, healthy cookbooks!
My friend Lindsay wrote a gorgeous cookbook – Nourishing Superfood Bowls – and was kind enough to send me a copy. It is slam-packed with simple, healthy recipes. And the photography… I have serious envy.
In the two days, I’d made two recipes. The first one came together in 5 minutes as promised, and it was absolutely delicious. I couldn’t get enough of the nutritional yeast “cheese” sauce.

The second recipe – a Creamy Avocado Tuna Zoodle Bowl – was equally good, with an avocado cream sauce that was just as addicting. I’m so glad I have extra to add to basically everything I eat tomorrow. I was really curious about how I’d like this healthier tuna salad. I actually used to love tuna salad as a kid, but my mom made hers with LOTS of Hellmann’s mayo (you guy with your Duke’s are just WRONG 😉 ). We always ate ours with apples and pickles in it. Pretty sure my mom was pregnant when she came up with that combo…
Anyway, Lindsay’s healthier version was equally good. I almost followed the recipe exactly! I didn’t have peas so I just tossed on some tomatoes and a few baby carrot and radishes I’d roasted over the weekend instead. I think I could have still added apple. #strangebutgood

Breakfast:
I made my solo morning cocktail and headed out to work. It was a big morning – our CEO announced out Series C funding! After the announcement/celebration, we continued to celebrate with food.
They brought in breakfast for the company from The Flying Biscuit, which is a famous breakfast staple in Atlanta.
Lunch:
Today’s work lunch was parmesan-crusted chicken and salad. There were also steak and potato options, but if you’ve been following my blog for long you know I abhor potatoes.
I was starving and didn’t take a picture. Good story, right?
Dinner:
Dinner was the tuna deliciousness from Lindsay. Her picture is prettier.

I know I’ve said it before, but THIS is the weekend I make a recipe of my own. I did really get my hair done last weekend though!

Mmmm bowls. Everything tastes better in a bowl. Especially when it takes 5 minutes to make. My dad also made some damn good tuna sandwiches when I was little. I’ve never been able to create them since.

I live 4 blocks from it, but I never go. The line is always so long! That made it super nice to have it brought in!

Tea and coffee was about as much as any company I have worked with provide. And not fancy coffee either… The instant stuff! I’m so glad you are taking advantage of all they provide – damn good food!
All of Lindsay’s bowls look incredible – that ‘cheese’ sauce… Yum!

This is by far the most food I’ve ever been provided at a company. One had a fruit bowl… but that was it. I’m in heaven.
