Cake can be an acceptable breakfast.
It’s cooked in a squash, so it’s practically a vegetable dish.
Microwaves are the greatest invention since sliced bread. Or sliced squash?
The idea of a freshly baked breakfast was particularly appealing in Atlanta’s ice/snow disaster. I was eyeing Kierston’s bites, but was having a hunger problem. It takes too long to pre-heat the oven and wait for something to bake!
Thanks to my meal prep, I had half a butternut squash pre-roasted and ready to eat. I whipped up my peanut flour cake batter and poured it in. Less than 1 min in the microwave later, I had a fancy-looking cake for breakfast. You could even make this quick-cake vegan with a flax egg!
Take a big bite. The fluffy, warm peanut butter cake paired with the natural sweetness of the softened squash is fantastic. You’ll be hard-pressed to figure out what to save for the last bite.
When life calls for instant gratification, why wait?
Peanut Butter Cake in a Squash
- 2 T peanut flour*
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp vanilla
- 2-3 drops liquid stevia
- 2 T egg whites (or flax egg)
- 1/2 small butternut squash, pre-roasted
Mix dry ingredients in a small bowl. Add wet ingredients and stir to combine.
Pour mixture in the “bowl” of the squash. Microwave ~45 seconds.
Top as desired (I used sugar-free syrup and pomegranate arils). Enjoy!
Note: I order my peanut flour from iHerb. Use discount code USO924 for $5-10 off your order! If you don’t have peanut flour, you can sub 2T protein powder.

Any excuse to eat cake!
Do you “bake” in the microwave?
What’s your favorite hot breakfast?
Christine @ Oatmeal Bowl says
I absolutely LOVE the combination! Guess I need to carry some spaghetti squash in my house! And I’ve only ever made a mug cake in the microwave that took 2 min to make. was divine. not healthy though. 😉
Laura says
Thank you! I love microwave cakes. My chocolate on doesn’t even taste healthy. 😉
Debbie @ Live from La Quinta says
Hmm, this sounds amazingly good. Thanks for the vegan version!
Lisa @ RunWiki says
Anything healthy that can be made in 45 seconds gets my full attention. This sounds so good and oh so easy!
Laura says
Only thing better than heathy is fast and healthy. And tasty. 😉

Everything should be… IN A SQUASH.
Bacon – in a squash.
Salmon – in a squash.
Zevia – in a squash.
Balls – in a squash.
Yep, theory is correct.
lindsay says
LOL! zevia? cream soda squash?
Laura says
Well, you could make a Zevia cake… didn’t we both do one with the cola?
Lucie@FitSwissChick says
Oh how i love microwave cakes!! The best part is watching them grow in the microwave. Can you believe I only work with one since a little more than a year?
I once almost burned down our office when making microwave popcorn and then shied away from it for years, lol.
Laura says
LOL! I bet that smelled wonderful…
Angela @ Happy Fit Mama says
Genius! I’m all about warm foods right now and when I can’t wait for the oven, the microwave rules.
lindsay says
okay, so sometimes i just steam everything in the microwave. Yep, too hot in TX to use the oven during summer. So, can i steam the squash there first too? Please say yes.
Hayley@healthyregardshayley says
yes you can! I have with spaghetti squash so I think it would work with others!
Laura says
You can! I linked to the micro instructions for a spaghetti squash on the gratin post the day before this post. you can also do it with a whole squash – just pop it in and go! It’s a good way to soften stubborn kabochas too. 😉
Fran@BCDC says
This sounds great. I have GOT to get some peanut flour. This might keep me from standing over the peanut butter jar with a spoon!! Have a great day, Laura!!
Laura says
YES! It is life-changing. 🙂
Brittany @ Delights and Delectables says
I love me some microwave muffins!!! 🙂 Yes please….
janet @ the taste space says
Sometimes I need food in a jiffy, too!!
Heather (Where's the Beach) says
That sounds so good, and easy. Do you think canned pumpkin would be too soft in lieu of the squash?
Heather (Where's the Beach) says
Never mind that above comment – I just realized that the squash wasn’t actually mixed into the batter. Clearly I need to wake up a little more before commenting !
Hayley@healthyregardshayley says
Yep, I am game for anything squash related. Squash life xoxoxo
Laura says
LOL @ squash life. That needs to be the new hash tag. 😉
Sam @ Better With Sprinkles says
I’m all for eating squash at any meal! I’m with you on the baked breakfasts – I never have the patience to wait for them!
Alex @ therunwithin says
I keep experimenting with peanut flour so thank you for this one. plus who doesn’t love butternut squash

Laura says
Ugh… I’m so over winter!
Nicole @ FruitnFitness says
Oh this sounds good! I haven’t roasted up squash in awhile, I was eating it all the time this fall. This sounds like it would be a perfect late afternoon snack. I often eat a big afternoon snack and then small dinner if dinner is after 10 on class nights.
Shashi @ http://runninsrilankan.com says
I eat kabocha with Peanutbutter – so this recipe of yours sounds pretty darn fantastic!
Hope you were not caught in any of the 11+ hour commutes I have been hearing about. Snow is forcasted for us again this Friday – hope it doesn’t stick.
Laura says
I jumped on MARTA, but it took my co-worker 14 hours!!
Morganne @ NutButterRunner says

Laura says
Cake is always the answer. 🙂
Gina @ Health, Love, and Chocolate says
I was going through cake in squash porn withdrawal after they stopped popping up so frequently on Instagram, so this was much appreciated. 😉
Laura says
Right?! It was every day for a while!
Allie says
This definitely sounds good! A vegetable… cake… what more could you want?!
Carmela says
Could you use Almond flour in lieu of peanut flour??
Laura says
Maybe… it would be a different texture, and you may need to cut back on the liquid since almond flour is not de-fatted and hold more moisture/oil.
Meghan@CleanEatsFastFeets says
The pomegranate arils look so pretty on top.
Laura says
That’s what she said.
Tina Muir says
Love it! totally agree cake can be for breakfast…..especially when i get back from my 9 mile runs ravishingly hungry, and want something sweet! I would love to have some of that cake right now! Yum!!!!
Heather @ Kiss My Broccoli says
Dude, I would seriously die without my microwave! Screw all those micro-haters out there! Mug cakes are my jam! Favorite hot breakfast? The whole spread: eggs, biscuits, hashbrowns, and BACON! I’d say pancakes, but I take so long to take pictures that they’re almost always cold! Ha!
Laura says
There IS something to be said for iPhone photography. 😉
