It wasn’t me, I swear.
This is weird even for me.
Even I couldn’t have some up with something as strange as eggplant french toast.  No, this fabulousness was linked up to an August #strangebutgood by Debbie @ Accidentally Delish.  It was shockingly good.
I did make it a little more odd by spicing it pie-style and cooking it in the wafflemaker.* Â You can also cook it in a skillet like “normal” french toast.
*Note: All things in my house are now cooked in the wafflemaker. Â
After a good waffling, I topped with with protein syrup and a little cereal for the added crunch. Â It made for strange (but good) brinner!
Pie-Spiced Eggplant French Toast
- 1 small eggplant, thinly sliced
- 1/4 C egg whites
- 1/2 tsp cinnamon
- 1/4 tsp powdered ginger
- 1/4 tsp freshly grated nutmeg
- 3-4 drops liquid vanilla Stevia
In a shallow bowl, beat together egg whites, spices, and stevia. Mix together.  Place eggplant slices in mixture and soak.
Meanwhile, preheat wafflemaker or pan.  Make sure you grease it well!
Place eggplant slices in your cooking vehicle or choice and cook until softened and golden brown. Â If you’re using a wafflemaker, push down on the lid to help flatten and cook the eggplant.
Plate and top with protein syrup (recipe below).
Protein Syrup
- 1/4 scoop (~8g) vanilla protein powder (I use Growing Naturals)
- 1 T syrup (I use a Stevia-sweetened one)
- 1/8 C unsweetened vanilla almond milk
In a small bowl, mix ingredients together. Â Pour over waffle. Â Eat.

I am floored that IÂ couldn’t taste any eggplant “funk.”
What do you like best: waffles, french toast, or pancakes?
Have you ever made a recipe from the #strangebutgood link up?
I will probably never make this, but I love imagining what it tastes like. It looks yummy and messy 🙂
LOL! I totally appreciate your honesty. 🙂
Okay wtf. I literally just said outloud – OKAY THIS JUST SOUNDS STRAIGHT UP WEIRD. ha ha ah! But that frosting, yeah, I will FROST MYSELF with it.
And you know what? I would actually TOTALLY try this recipe… Ha! because I LIKE WEIRD 😉
Yessss!!!! I weird-ed you out. That’s like my biggest accomplishment for life.
I’m definitely a waffle girl…and getting a new waffle iron has made me more motivated to get experimental. Next on the list are hash browns!
I’ve wanted to make those too!
I think this is definitely the most #strangebutgood recipe ever. I don’t know if I’m on board. Eggplant always turns out rubbery for me.
It definitely wasn’t rubbery! I think the egg bath keeps that from happening.
WOW.
this is fo sho quintessential STRANGE BUT GOOD which you know means I so so wannna try….
Did you throw away the seeds? I read once they are the poor man’s caviar, dunno if they would work with something sweet though. I want a weekend at home so bad so I can make fun breakfast waffles, although you brinner ones have been looking very tasty!
I always eat them… too much effort to scoop ’em out.
What an awesome idea to make eggplants in the wafflemaker 🙂 I catch myself thinking if it would work with other veggies.. haha. Thanks for inspiring me… Now I just need a waffelmaker!
I am pretty sure you can waffle ANYTHING! 😉
Haha, Yeah I agree! 🙂 I Might go with a portobello for a burger bun!
Ohhhh… brilliant!
this may be how i get the kiwi to eat eggplant!
haha we agree – for us. this might be the only way we eat eggplant 😉
love it!
we love our waffles!
I dare all of you (and Kiwi) to try it!!!
Ok, this is brilliant! I love eggplants and this makes perfect sense. Though the only eggplants I have right now are the Japanese eggplant out of my garden so they’d end up being strips or itty bitty bite sized “toasts”
That might actually work better. I had to do mine in 4 batches.
OK, now that one is different haha
Strange indeed. haha Love me some French toast though. I might have even been able to link up my recipe today. Wish I’d thought of that sooner!!
this is really strange – i love your strange but good edition.
Wait…. the eggplant is the “toast”?! I’m not a big eggplant person so not sure I could handle this but wow, major creativity points!!
Haha! Yep, it’s the toast. You really can’t taste it…
Surprised you couldn’t taste eggplant. That’s a hard flavor to disguise.
Syrup and cinnamon can make anything taste like dessert. 😉
I do enjoy baking my eggplant with a sprinkle of vanilla stevia and cinnamon 🙂 This looks great!
Like as chips? I love doing that too!
Okay, that is definitely a weird one, but I am sure the Nu Naturals made it taste good! After all, its better to be good for your health, than good for your tastebuds….not that I doubt your waffles 🙂 I love love loooovvee pancakes though, thats where my heart is!
Ha! It is weird… but I promise it’s both healthy and good. You could totally do it in a pan as you would pancakes.
Wow, you can’t even tell it’s eggplant! It looks legit like pancakes from ihop.
They should totally add them to the menu!
This IS strange! But I think I’d like it!
I don’t know what I found funnier….the fact this is weird even for you (I agree; it’s really weird) or the fact you’re putting everything in the waffle maker now. Definitely the latter.
I’ll take this as a compliment.
Yummy, these savoury waffles are looking so good 😀
Eggplant is a fave ingredient to work with!
Cheers
