Big news: I went running!
This was no small feat 4 months post-ACL surgery.
I actually ran 4.5 miles, but I didn’t track the first half because I didn’t want to pressure myself. After the first half felt good, I couldn’t help but to see how slow I’d gotten. It wasn’t as bad as I feared, but I’m a long way from my best. At least I can start working toward it again!
As I said in my IG post, this may not sound like a big deal. However, 4 months ago I’d just had ACL surgery. I couldn’t get out of bed without tears streaming down my face from pain. So after this outing, I was incredibly grateful.
Maybe a 2018 comeback half marathon is in order…
Enough of the sappy stuff! It’s time for #WIAW. Be sure to link up to Jenn’s WIAW baby at the bottom!
Breakfast:
We always start with our morning cocktail. Then I choked down like half a cup of coffee.
Then I made a breakfast that Vegas wouldn’t touch – a sweet egg “pizza.” She doesn’t agree with my assertion that sweet eggs are #strangebutgood. Whatever. More for me!
I scrambled my egg whites with ricotta and cooked them flat in the pan, flipping once. That formed my crust. Then, I topped it with leftover purple sweet potatoes and raspberries. It was all finished off with peanut flour sauce: peanut flour, cinnamon vanilla, a little stevia, and almond milk.
They’re really good as savory pizzas too, if the sweet is a little too strange for you. 😉
Lunch:
I had a craving for salmon. Raw salmon. This giant poke salad hit the spot.
Dinner:
Vegas has been on a mission to make paella at home ever since we returned from Barcelona. We took a cooking class there (the one my profile pic is from) and learned how to make an awesome seafood paella. I was a little nervous to try it at home, but Vegas made it happen.

I’m considering hosting a 21 “detox” in January (I hate the connotation of the word detox – this is a healthy, clean approach with solid foods). I’ve done it annually on my own for 5 or 6 years, and just did it again in this October. I lost 8 lbs and reset some bad habits!
Would any of you be interested in participating in a January detox?
Do you like sweet eggs?
Patrick@looneyforfood.com says
That paella looks amazing! So great how your recovery is going!
Laura says
Thanks! I can’t wait to experiment more… with both!
Jess @ Jessica Cording Nutrition says
Congrats on your run! Those post-injury workouts are amazing. I went to my first barre class with a colleague yesterday morning after having had to take a few months off while doing PT. I felt kind of silly but felt so grateful to be in a roomful of Lululemon-clad New Yorkers at 7 am, standing on my heels doing squats in a front of a barre. I still don’t understand people who get really serious and intense about a it, but it felt so good to just be there and do the things with minimal pain!
Laura says
Good for you!!! It’s such a relief to get back.
meredith @ cookie chrunicles says
yay for running! this is such a big step in your recovery and just so awesome. I hope it only continues for you and that you are able to run a half in 2018!
Laura says
Thank you! I’m trying not to over-do it, but I think by the summer I’ll be ready to GO.
Kate @ Kate Lives Healthy says
Yay! Congrats on the run and the speedy recovery. Can’t wait to hear what huge goal you’ll accomplish in 2018 🙂
Laura says
Thanks! I still have a ways to go, but I’m excited to be out there.
Patricia @Sweet and Strong says
I hate labeling thing like ‘detox’ or ‘clean eating’ but totally agree that I feel better after making healthier habits consistently. I would love it!
And congrats on the 4 miles! That’s amazing and a huge accomplishment post surgery!
Laura says
YES! That’s exactly the point of the 21 days. It’s just a nice way to give your body a break after the holiday craziness.
Deborah Brooks says
Running again is a huge deal! Way to go
Faith VanderMolen says
I always love your #strangebutgood combos! I’d probably eat most of them too:)
Laura says
Thank you!!! Those eggs are the jam. 😉
Cora says
Not a big deal!? This is a HUGE deal!!! Congrats Laura!! This is wonderful and exciting news!
Making an egg crust with egg whites and ricotta… that’s brilliant. I’d be all down for the sweet combo. Sweet all the way for me.
Laura says
Thank you so much!!!
Marsha says
Yay! I’m so happy for you and glad to hear this report!
Laura says
Thanks friend!
Kate says
Congratulations on your first run back!

YAY! Running after an injury or surgery is SUCH a huge accomplishment! And it’s always a big relief to get the first one out of the way to remind yourself that everything still works haha. Nice job lady!

That’s so true! Huge weight off my shoulders.
Jen @ Chase the Red Grape says
Yeah I like sweet eggs – i used to do a scramble with eggs, banana and cinnamon topped with nut butter that was awesome…. Need to make that again!
And I am super happy to read about your ACL progress, a reward for a rehab well done! 🙂
Laura says
There’s nothing I love more than banana and peanut butter. Well… maybe + chocolate.
Abby @BackatSquare0 says
Woohoo – not only did you run, but you ran pretty darn fast too!
So freaking happy for you.
Laura says
It’s so much harder than I remember it being! LOL!
GiGi Eats says
# 1 – GIMMIE THAT RAWWWW GOOSHY STUFF.
LMFAO.
# 2 – HECK YES for being to run even just a little bit post ACL surgery. You’re not, that is NOT an easy feat but you’re bionic now, so I expect nothing less at this point! HA!
Laura says
HA! I’ll be bionic after I get the second ACL repaired… just can’t bring myself to do it yet.
Megan @ Skinny Fitalicious says
YEAH for running! My friend had ACL surgery 7 months ago and is still struggling. She had massive quad atrophy and can’t balance to walk. It’s been so frustrating for her.
Laura says
Ohhhh… that sucks! One thing I’ve learned from this and watching other go through it is that every injury is recovery is different. Comparison will do you NO good. That was a hard lesson.
Meghan@CleanEatsFastFeets says
Sweet eggs freak me out too, but I love the running you’ve been doing. I’m so glad it doesn’t hurt and all is well.
Laura says
I mean… you put eggs in cake. In pancakes. Why not?! 😉
Susie @ Suzlyfe says
Call it a reset. Better than a detox. AND GO YOU for your run! You know I never snort at runs after injury or surgery! I’m jealous!
Laura says
I was doing that, then someone asked if it was Beachbody. UGH! Why does everyone ruin words?!
Mary says
I can’t believe it’s been 4 months since your surgery, time really really really flies, I’m just so happy you are doing so much better. I was worried about you for a bit. When I take a week off of my regular workout routine I always decide I’ve gained tons of pounds and all of my hard work has gone to waste, I always realize I’m wrong but it doesn’t stop me from thinking that. So happy you can run again, that’s pretty awesome. Woo Yooo for your upcoming half marathon. Vegas is so talented. Next time I’m in town you have to invite me over for paella night but I want to be involved in the cooking. 🙂 You can teach me all of your tips and tricks.
Laura says
It felt like FOREVER, but you’re right… 4 months is nothing in the grand scheme!
If you are ever in San Diego, I DEMAND we hang out. 🙂
lindsay Cotter says
BRO! I’m so stoked for ou. YAY running! And of course, sign me up for paella night, anytime
21 day detox sounds awesome, but it;s like the word moist.. ugh. Hate. Maybe say 21 day reset? dunno. But detox is so trendy. le sigh
Laura says
We really need to have a dinner party one day. In Europe. LOL!
Why are trends always ruining stuff?!
