S’mores Protein Pancakes [Gluten-Free Recipe]

S’mores don’t have to wait for dessert.

What ISN’T good in pancake form?

I still had graham crackers and marshmallows leftover from my S’mores Brownies… I had to use them some how!  Why not create a pancake breakfast?  Don’t S’mores Protein Pancakes sound divine?!

Maybe it’s a little strange to have a campfire dessert first thing in the morning,  but it sure is good!

S'mores Protein Pancakes

These are actually not bad for you.  In fact, I added a chocolate-y protein punch to increase the stay-power and make them healthier.  What’s more is that as long as you use gluten-free oats, they’re gluten-free!

Healthy.  Gluten-free.  Protein packed.  Vegas was none the wiser as she downed her dessert-breakfast.  She’s actually quit asking me what the “surprise” is in whatever I make her.  #winningS'mores Protein Pancakes

You can add syrup or not.  I thought the melty marshmallows were great on their own… but it’s also good with a schemer of peanut butter.

S'mores Protein Pancakes

S’Mores Pancakes

  • 1/4 C raw oatmeal
  • 1 T coconut flour
  • 1 T cocoa powder
  • 2/3 scoop (22g) Rice Protein Chocolate Power
  • 1 tsp cinnamon
  • 1/2 tsp no-salt baking powder
  • 3 egg whites
  • 1/3 C unsweetened vanilla almond milk (or water)
  • 6-8 drops vanilla liquid stevia
  • Toppings: crumbles graham crackers, marshmallows, syrup

In a small blender (I used a Magic Bullet), blend together dry ingredients until oats are ground.  

Add wet ingredients and blend again to combine.  You may need to add more liquid if you let it sit – coconut flour is extremely absorbent.

Heat pan over med-high, spoon batter onto pan, and cook until done (~3-4 mins each side). 

Top with crumbled graham crackers and marshmallows.  I torched my marshmallows for  second to get them nicely melted.  

Makes 8 small-ish pancakes (2 servings).

    Oh yes, chocolate for breakfast is a regular thing for me. Though sometimes I need a savory breakfast, too! Like a sandwich.
    I love pancakes and those pancakes look and sound amazing. Pinning for later 🙂

    S’mores are good any time of the day. They might just be nature’s perfect food…no, wait, isn’t that a commercial for something? Whatever. What I mean to say is that I now need to go to the store for graham crackers and marshmallow so I can make these for breakfast!

    Uh, you are not the only chocolate craver in morning. I have always eaten a small handful of chocolate chips by 6am — either in yogurt, on protein pancakes or just alone! Okya, LOL while typing this a diet dr pepper ad popped up . .. and hte first thing said by some girl “I want something sweet” – hahahah that’s my answer

    You had me at s’more and pancakes, seriously two of my loves!! Please come make these for me tomorrow morning really early before A’s soccer tournament….. 8am 1st game and all I was hoping for is pancakes for breakfast this weekend or next (S’s soccer tournament).

    Those pancakes look amaaaaazing! I def prefer a sweet breakfast. Honestly, I like to start and end the day on sweet. I crave savory midday. I’ve been doing breakfast type foods for dinner recently. I think it helps kick a dessert craving to eat pancakes with syrup for dinner. 🙂

      Did you know you can get sugar free marshmallows? I’m sure thy aren’t exactly “clean” … but you can make them with stevia too!

    Gah Vegas is one lucky gal- what I would do for someone to make me a stack of these :)! As much as I love almost anything s’more flavoured, my favourite would be the original, camping-style s’more!
