Zucchini Bread Oatmeal

I’ve made Blueberry Pie Oatmeal:

Carrot Cake Oatmeal:

Mexican Oatmeal:

Strawberries and Cream Oatmeal (OMG – this was good):

… my oats have been a variety of fun colors!

One thing they have NOT been is green.  Until now.

I like zucchini bread for breakfast.  Zucchinis are in season and especially delicious from the local farmer’s market.  These factors lead me down a path to an obvious breakfast conclusion… Zucchini Oatmeal.

Often I will spread nut butter on my zucchini bread, so I decided to follow suit here with a glob of almond butter…

… but it needed something extra.  Jelly?!

I popped a few blackberries in the microwave and ended up with a blackberry syrup of sorts. Zucchini Oats, PB&J-style.

Much like the bread, the zucchini is seen but not heard tasted.  If you are a fan of a sweeter zucchini bread, try it out with some chocolate chips!  I like to keep my b’fast a little more savory on Monday mornings.  Start the week out with my sweet tooth at bay. 🙂


Zucchini-Oatmeal

Zucchini Bread Oatmeal

  • 2/3 C unsweetened almond milk
  • 1/3 C oatmeal (I used McCann’s Quick Cooking)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • splash of almond extract
  • shake of sea salt
  • 1/2 C grated zucchini
  • handful chopped pecans
  • 1/2 T almond butter
  • blackberry “syrup”

In a pot, combine first 6 ingredients and cook according to your oatmeal’s package instructions.

Just before done (1-2 mins), add the zucchini.  Stir well and cook another 1-2 mins.  The zucchini should add moisture, but if the oats get too dry add a little water or milk.

Meanwhile, place berries in microwave-proof bowl and heat for 20-25 seconds.  This makes a delicious, all-natural berry syrup!  You may want to add some sugar/syrup… but for my taste, the berries were sweet enough without it.

Remove from heat and top with almond butter, berries, or other toppings.

Makes 1 serving.

I hit up the Farmer’s Market this weekend and cannot WAIT to have a veggie-filled week.  #thingsineverthoughtiwouldsay

    I was immediately intrigued when I saw the title of your post! Sounds very yummy. I actually have some extra zuchinni so I might try it this week.

    I wonder how it would work with overnights. That is really all that I have time for now a days!

    I love having banana and berries.. but pumpkin oats are delicious in the fal time 🙂 I want to give sweet potato oats a go as well!

      I thought about trying it over night. You’d definitely want to account for the moisture from the zucchini, but I bet it would work. Let me know if you try it!

    Zucchini oatmeal sounds amazing, I’ll try it tomorrow morning(or maybe tonight). Does it matter when you add the sea salt? I didn’t see that step. Also, do you have any idea where to find RED sea salt? I can’t find it anywhere. Thanks Laura!

      Red sea salt can probably be found at Whole Foods – I’d call first though. Possibly also at Fresh Market of the Dekalb Farmer’s Market.

    I used to add spinach to my oatmeal all the time so I can imagine zucchini would be really delcicious! I love how you still made it sweet instead of savory, too. Looks great!

    Very creative! I’d like this if I didn’t have to make it. I complain about having to just wash my berries for berry oatmeal, much less add other ingredients! (yup… guess who’s a lazy pants)

    Such a good idea! You can barely taste Zucchini (aka courgettes this side of the pond) so it’s a fab way to sneak in some veggies! 🙂

    Ooh, interesting! My favorite oatmeal is pumpkin-cinnamon-syrup oatmeal, great for the fall 🙂 I imagine zucchini isn’t all that different!

    You KNOW I love me some creative oatmeal (I had maple-nutella oatmeal this am)… LOVE the idea of zucchini oatmeal… Great way to get veggie into breakfast!

    Just found your site and these fun oatmeal ideas. Can’t wait to try zucchini oatmeal!

    My favorite oatmeal breakfast has grated apple, cinnamon, vanilla, ground flax seed, walnuts and coconut oil. I just cook the oatmeal and then add the goodies. It is quite tasty and keeps me energized until lunch.
